Title: Festive Fruit Trifle

1 1/2cSkim Milk
1/2cLow Fat Cottage Cheese
1/4cSugar
2 1/2tbCornstarch
2tbInstant Nonfat Dry
  Milk Powder
2tsVanilla Extract
1 Orange Rind, Grated
1/2cDiet Strawberry Jelly
1/4cOrange Flavored Liqueur
1 Angel Food Cake Mix or
  Purchased as Loaf Style
5cFresh or Frozen Thawed
  Strawberries
5 Kiwi Fruits, Peeled &
  Thinly sliced
4mdOranges peeled &
  Sectioned

Mix & bake angel food cake in loaf pan. Let cool or use purchased cake. Combine first 5 ingredients in container of electric blender; cover and process until smooth. Pour mixture into top of double boiler; bring water to boil. Reduce heat to low; cook; stirring constantly, 10 minutes or until mixture thickens. Remove from heat; Remove from heat; stir in vanilla and Orange Rind. Cover and chill. Combine Strawberry Spread & Orange Flavored Liqueur in a small sauce pan; bring to a boil, stirring constantly. Remove mixture from heat, & let it cool completely. Trim crusts from cake, making cake an even rectangle. Reserve crusts for some other use. Cut cake into 1/2 inch slices. Line the bottom of a 3 quart glass bowl with half of the cake slices; brush this with 1/2 of the Strawberry mixture. Arange half each, of fresh fruit around lower edge of bowl over cake slices. Spoon half of cooled custard mixture over fruit layer. Repeat procedure with remaining ingredients; cover & chill 8 hours. Garnish top with fresh fruit, if so desired. A extra Kiwi fruit sliced up makes a great garnish. [end] Health: Fat Content: Less than 3 grams fat (serving)
